The Story: Yang Hsien was a poor tea maker in who lived in Jixing, China (famous for purple sand teapots). When his baby monkey imitated him to collect tea leaves from a tea plant growing high upon a misty cliff in the clouds, the tea was named after him.

Bring fresh cold water to a rolling boil once, careful not to over boil, and allow one minute to cool down.
Ateava recommends using purple clay or porcelain tea ware (gong fu style), and drinking via thimble-sized cups. Gently add leaves into a teapot and quickly flush (cover the leaves with hot water and pour it off) to appreciate the aroma of the leaves. Infuse with the near-boiling water for 1-3 minutes and serve.
Increase both steeping time and/or water temperature for each successive infusion up to 7 times.
